We make malt from the ground up. Our roots run deep in western New York - six generations of Hawleys have grown up here on our farm - and we have longstanding relationships developed over time in fields, barns, and on the seats of tractors, with the farmers who grow our beautiful grains. It is an honor to serve as the conduit between our growers and the many brewers and distillers we’ve come to call friends.

Malting
Our malt brings some serious hardware home to brewers and distillers. Medals from the coveted New York State Craft Beer Competition Governor’s Cup, The Ruppert’s Cup (NYC Beer Week), the Great American Spirits Competition, U.S. College Open Beer Championship, and countless homebrewing competitions sit proudly in breweries and distilleries in New York State and the Northeast.
Roasting
We move green malt past the kiln and directly to the roasting drum to create a spectrum of crystals that are glassy inside and range in flavor profile from mild, candy-like sweetness and pronounced caramel to prune and burnt marshmallow. Our process ensures that each crystal is perfectly formed, with a consistent size and shape that allows for an even roast. We take pride in the fact that our malt is truly exceptional.
Flaking
We steam condition New York and North American grown grains, then roll them right here on the farm! Using flaked grains is a great way to provide haze, improve mouthfeel, and moderate color, flavor, and FAN level. Not only does steam flaking increase the surface area of the grain, it improves starch digestibility and ultimately enhances ruminant performance. Our Great Flakes products consistently out-perform commodity flaked grains. It’s true! Choose from Corn, Oats, Wheat, Barley, and Rye.

I started New York Craft Malt in 2012 because I thought we could do better - and I was ready for a challenge. Our three daughters were grown and scattered across the country. The time I spent coaching (and cheering!) on soccer fields, school concerts, and dance recitals had come to a screeching halt.
The craft beer and craft spirits movement was growing, but craft malt was scarce. As an up-before-dawn, dirt-under-your-nails farm kid with a work ethic that followed me into adulthood, my gut told me that providing grains grown locally, and malted with a nod to artisanal craftsmanship, would not only quench the consumers growing thirst for local beer and spirits but would also give me a chance to revitalize the farm I’d grown up on, the farm that is as much a part of me as my crooked nose - broken over the course of a decade’s long amateur career playing rugby.
